Nancy Kohlbeck used to make these for The Elegant Picnic. They were always popular. The problem was that I was always eating the profits.

Nancy's Bourbon Maple Blondies

  4     teaspoons  baking powder

  2     cups  flour

  1/2  teaspoon  salt

  4     cups  walnut halves

  4    cups  brown sugar Packed -- (2 boxes)

  4     eggs -- (large)

  1/2   pound  sweet butter -- cut in pieces

  6      tablespoons  bourbon whiskey

  3      tablespoons  maple extract

  4      teaspoons  vanilla extract 

Measure the flour, salt, baking powder and walnuts in the bowl of the food processor. pulse for 15 seconds until the nuts are coarsely chopped. Remove and set aside. 

Add the sugar and eggs to the work bowl. Process 1 minute. Stop and scrape the bowl down. Add the butter pieces, bourbon and the extracts. Process 1 minute and scrape the bowl down. 

Add the dry ingredients and pulse 5 or 6 times until mixed. Pour batter into oiled or buttered pans and bake at 350 degrees until a stick inserted into the center comes out clean. Cool on a rack and cut into squares.
